Recipe Swap Monday – Banana Split Snack Cake

Banana Split Snack Cake

Ingredients:
1/3 cup butter, softened
1 cup sugar
1 egg
1 medium ripe banana, mashed
1/2 teaspoon vanilla extract
1-1/4 cups all-purpose flour
1 teaspoon baking powder
1/4 teaspoon salt
1/3 cup chopped walnuts
2 cups miniature marshmallows
1 cup (6 ounces) semisweet chocolate chips
1/3 cup maraschino cherries, quartered
Directions:
In a bowl, cream butter and sugar. Beat in the egg, banana and vanilla. Combine flour, baking powder and salt; stir into creamed mixture. Add walnuts. Spread evenly into a greased 13-in. x 9-in. baking pan. Bake at 350° for 20 minutes. Sprinkle with the marshmallows, chocolate chips and cherries. Bake 10 minutes longer or until lightly browned. Cool on a wire rack. Cut into squares. Yield: 24-30 servings.

I did make this bread Sunday Night. I made this for my husband to take to work. I don’t make a lot of  Breads in summer typically. But we haven’t really had much of a summer either. LOL

Pumpkin Bread Recipe

1 1/2 cups flour

1/2 teaspoon salt

1 cup sugar

1 teaspoon baking soda

1 cup of pumpkin puree

1/2 cup olive oil

2 eggs beaten

1/4 cup water

1/2 teaspoon nutmeg

1/2 teaspoon cinnamon

I haven’t seen Anissa post yet this morning. I love this theme I have found so many yummy recipes from this swap.

I am actually going to make this for supper tonight!! YUM

Cheesy Crock-Pot Chicken-Jolene

6 boneless skinless chicken breasts
salt and pepper to taste
garlic powder to taste
2 cans condensed cream of chicken soup
1 can condensed cheddar cheese soup

Rinse chicken and sprinkle with salt, pepper and garlic powder. Mix undiluted soup and pour over chicken in crock pot. Cook on low 6-8 hours. Serve over rice or noodles.

Snickers Peanut Butter Cookie
1 cup butter or margarine, softened
1 cup creamy peanut butter
1 cup brown sugar
1 cup white sugar
2 eggs
1 teaspoon vanilla extract
2 1/2 cups all purpose flour
1 teaspoon baking soda
1/2 teaspoon salt
20 fun size Snickers candy bars
Cream together the butter, peanut butter, and sugars. Beat in the eggs and vanilla. Stir in the flour, bakins soda and salt. Mix well.
Chill the resulting dough for 1 to 2 hours.
Take about 1/3 cup (about one ice cream scoop) of the dough and wrap it around a Snickers bar. Repeat, using the rest of the dough and Snickers bars.
Bake on ungreased cookie sheet at 350 F (175 C) for 15 minutes. Makes 20 cookies.

Strawberry Bread

Ingredients:
2 cups fresh strawberries
3 1/8 cups all-purpose flour
2 cups white sugar
1 tablespoon ground cinnamon
1 teaspoon salt
1 teaspoon baking soda
1 1/4 cups vegetable oil
4 eggs, beaten
1 1/4 cups chopped pecans
Directions:
1. Preheat oven to 350 degrees F (175 degrees C). Butter and flour two 9 x 5 inch loaf pans.
