Recipe Trader Sundays – Blueberry Snack Cake

Well today since I am not going anywhere I actually plan on doing some baking and cooking. I am making sausage balls and blueberry snack cake and I am not sure what else as of just yet. I know I need to restock the muffins so I probably will make pumpkin muffins.
Blueberry Snack Cake – Taste of Home
Ingredients:
- 2 cups all-purpose flour
- 1/2 cup cold butter, cubed
- 1 1/2 cups sugar
- 1 teaspoon baking powder
- 1 cup milk
- 2 eggs, seperated
- 2 cups fresh or frozen blueberries
Directions:
- In a large bowl, combine flour and sugar. Cut in butter until crumbly; set aside 3/4 cup for topping. Beat in the baking powder, milk and egg yolks to remaining mixture until well combined. Beat egg whites until soft peaks form; fold into batter.
- Pour into a greased 13 in x 9 in baking dish. Sprinkle with blueberries and reserved crumb mixture. Bake at 350 for 30 – 35 minutes or until golden brown and a toothpick inserted near the center comes out clean.

I am making them a little later today. I didn’t get the chance to make them. I love blueberries. I just spotted a really great Cranberry Bar recipe while I was searching blogs that looks delicious. I am in a baking mood today. Hope you have a good day too.
I’m drooling as I read this. I will be sure to make this recipe this weekend. Oh, I also wanted to let you know that I tried your dill dip and it was a huge hit! I end up making it every few days, now.

Yeah!! I am so glad you liked the dill dip. I like it better then the store bough kinds. I hope you like the blueberry snack cake.
The butter is missing from the list of ingredients. One stick?
