Recipe Trader Sunday – Sour Cream Blueberry Muffins

This morning I am going to make a couple batches of blueberry muffins and I am going to freeze some too. Dakota has been on a blueberry kick lately.

Sour Cream Blue Berry Muffins
Ingredients:
- 2 cups Biscuit/Baking Mix
- 3/4 cups plus 2 Tablespoons sugar, divided
- 2 eggs
- 1 cup (8 ounces) sour cream
- 1 cup fresh or frozen blueberries
Directions:
- In a large bowl, combine the biscuit mix and 3/4 cup sugar. In a small bowl, combine eggs and sour cream; Stir into the dry ingredients just until combined. Fold in blueberries.
- Fill greased muffin cups three-fourths full. Sprinkle with remaining sugar. Bake at 375 for 20 – 25 minutes or until a toothpick inserted in the center of muffin comes out clean. Cool for 5 minutes before removing from pan to a wire rack. Makes 1 dozen.

I don’t know what the sour cream does. I think it adds moisture.
Those sound good. I totally love blueberry muffins, but never make them from scratch, I’ll have to try this sometime

I love blueberry muffins too. I found a recipe for Blueberry Cornmeal Muffins. I don’t think I have ever had those before.
These sound really yummy and easy to make!

You are probably right Louise. I was thinking of substituting this with strawberry to see how it would taste.
