Recipe Trader Sunday – Peanut Butter Muffins

Well it’s time for another week of Recipe Traders. I wanted to post a picture of some Peanut Butter Muffins but I didn’t get a chance to make them yet. I thought these would make a delicious breakfast for the kids. So you don’t get the picture this week. LOL

Peanut Butter Muffins – Thanks Sugar Pies for the recipe!
Ingredients:
- 2/3 cup butter, softened
- 3/4 cup white sugar
- 3 eggs
- 1/2 tsp vanilla
- 1 3/4 cup sifted all purpose flour
- 1/4 tsp salt
- 2 tsp baking powder
- 2 tblsp powdered cocoa
- 3 tblsp cream (or milk)
- 1/3 cup creamy peanut butter
Directions:
- Preheat oven to 350. Line muffin tins with paper liners
- Cream together butter and sugar until light.
- Add in eggs one at a time.
- Add vanilla.
- Stir in flour, salt and baking powder until batter is uniform and no flour remains.
- Using ice cream scoop, fill each muffin liner with batter until they’re 3/4 full.
- Top each a heaping teaspoon of Peanut Butter.
- Swirl Peanut Butter in with a toothpick, making sure to fold a bit of batter up and over the top.
- Bake for 20 minutes or until a tester inserted in the center comes out clean.
- Remove to a wire rack to cool completely.

My kids and husband are peanut butter fans.
Hi- I feel fantastically lucky as I have ALL of the ingredients for these muffins in my kitchen right now!! YUM!

LOL I don’t eat much of the treats. Today I am going to make a batch of chocolate chip cookies using coconut oil that I am reviewing. Will post that later today and let you know how it is.
These sound really yummy!… I’ll have to give them a try. I made a peanut butter cake when I was in high school… but I lost the recipe and never found it again.
