Recipe Trader Sunday – Fluffy Pancakes – Special Recipe Later Today

This morning I thought I would be nice and make pancakes this morning as we dont’ make them homemade often. Well the recipe was very good. The bad part was that my pans suck! I need to get a griddle that I can make the panacakes on. I also desperately need new frying pans as the set I have is a major disappointment.
For some reason I can’t send the picture from my phone to my email. Not sure why as I have done it before. Probably best you dont’ see the picture as they don’t look the greatest thanks to the pan.
I will have a special Valentines Day Cake Recipe that I will be sharing later. I will have a picture of that!

Now those pancakes in the picture I am borrowing look delicious!! Pefect compared to mine! That’s ok at least I tried to make them with the pans I had. Next time I go to JC Penny’s I will purchase a griddle as I know they cook evenly and nicely.
Fluffy Pancakes
Ingredients
* 1 cup all-purpose flour
* 1 tablespoon sugar
* 2 teaspoons baking powder
* 1/2 teaspoon salt
* 1 egg
* 3/4 cup milk
* 1/4 cup shortening, melted
Directions
1. In a small bowl, combine the flour, sugar, baking powder and salt. Combine the egg, milk and shortening; stir into dry ingredients just until moistened.
2. Pour batter by 1/4 cupful onto a greased hot griddle. Turn when bubbles form on top of pancakes; cook until the second side is golden brown.
Note: I added a tsp of vanilla for extra flavor too. My husband said they were pretty good even if they were a little burnt from the pans.

I LOVE your recipe! Our special pancake mix is VERY similiar to this one
Of course we use our gluten free flour instead of the all purpose and then I also add a tsp of Vanilla and a dash of cinnamon
YUMMY the kids will eat them up! So other than that our recipes seems to really be pretty much same! I am going to try and post some of my recipes too coming soon

Looking forward to seeing your recipes Sherry. The cake was delicious. I love to add vanilla to it. I forgot to add cinnamon. I normally do too.
