Maraschino Mini Muffins

Well I guess I am on a cupcake/muffin kick today. All though I am going to stop now while I am ahead. LOL I decided to whip this batch of mini muffins up. They are a hit in the house. Although the only thing I would have done differently in this recipe is add 2 teaspoons vanilla extra and 1 teaspoon almond and 2 to 3 tablespoons of maraschino cherry juice to give it a little more flavor. That’s just me though 🙂

Maraschino Mini Muffins

Ingredients:

  • 1/3 cup butter, softened
  • 2/3 cup sugar
  • 1 egg
  • 1 cup milk
  • 1 tablespoon maraschino cherry juice
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon almond extract
  • 2  1/2 cups all purpose flour
  • 4 teaspoons baking powder
  • 3/4 teaspoon salt
  • 1/2 cup vanilla or white chips ( I used mini chocolate chips)
  • 1/3 cup finely chopped maraschino cherries (think I used a half cup)

Directions:

  1. In a mixing bowl, cream butter and sugar. Add egg and mix well. Combine the milk, cherry juice and extracts. Combine the flour, baking powder and salt; add to creamed mixture alternately with milk mixture. Fold in the chips and cherries.
  2. Fill greased or paper-line miniature muffin cups two-thirds full. Bake at 375 for 12 – 15 minutes or until a toothpick comes out clean. Cool for 5 minutes before removing from pans to wire racks. Yield 4 dozen

    Your welcome. I made a second batch with what I said I would change. It has a little more flavor then it originally did when I followed the recipe. I think next time I would add even more juice. LOL That’s just me. My kids loved them which I am shocked but I am happy so I froze a batch.
